Pepperoni Pizza Meatloaf

I got the all-clear from the doctor to begin full-out working out again on Friday. This has been the longest 2 weeks of my life. Although, I'm still doing light work outs, I'm a little envious of all my crossfit friends doing their dead lifts, thrusters, and kettlebell swings. I'm really not envious of the running. They can have that.

Last night, I tried to get The Hub's to have the Pepperoni Pizza Meatloaf but he wasn't having it. It wasn't that he didn't like it but he eats meatloaf like once every 2 years. I'll have to wait until 2015 to make it again... So he made fish and shrimp with fresh green beans. The shrimp were amazing. The green beans were awesome. The fish tasted like fish... It was disappointing. That was totally not his fault. I'm really weird about fish and one hint of a fishy taste and I'm done. So, I just ate some shrimp and a lot of green beans. 

The recipe for the Pepperoni Pizza Meatloaf was adapted from TGIPaleo. I know I have pinned a lot of recipes from her and I'm pretty sure I have cooked a couple too. She has some good ones!

You don't care about my fish experience last night though...you're here for the meatloaf recipe. Ok, ok here it is.

Finally.

Pepperoni Pizza Meatloaf

{I've really got to stop using my phone to take pictures. Mine sucked so I used TGIPaleo's}

Ingredients
- 1 lb Ground Beef {as lean as possible}
- 1 lb Ground Pork
- 1 Egg
- 1/4 Onion, finely chopped
- 1/2 Bell Pepper, diced
- 1 c Slice Mushrooms {The Hub's said he used about 10}
- 1 can Diced Tomatoes
- 2, 4 oz cans of Tomato Paste
-1 T Italian Seasoning
- Sea Salt and Pepper to taste
-1 pkg Applegate Farms Pepperoni

Instructions
1. Mix the meat eggs, veggies, diced tomatoes, seasonings, and 1 can of tomato paste until everything is mixed together
2. Shape into a loaf in a baking dish. 
3. Bake at 350 degrees for 1 hour. Remove from the oven and top with can of tomato paste and pepperoni. Return it to the oven for another 10-15 minutes, or until the pepperoni is crisp around the edges.

That's it. It's a pretty easy recipe, which is what we love around this house. Also, we didn't make any sides. There are enough veggies in it that we didn't have to. It was super filling!

Now, I know you're wondering why we used canned diced tomatoes instead of fresh. That would be because we forgot to get tomatoes in the produce department. This mama would've needed to get back on her anxiety medicine if I would've had to walk all the way back across that store for tomatoes. {It was 5 pm on Saturday before The Super Bowl}. So canned tomatoes it was. They were no sugar added. That's also why we used tomato paste instead of sauce because we couldn't find a no sugar added sauce.
